Coconut Chutney (Makes 4 Servings)
Packed with electrolytes
Coconut meat from 2 to 3 Thai baby coconuts, chopped. about 1 cup
Juice of 1/2 lemon, abut 1 tablespoon
1 clove garlic, minced
1 small Thai red chilli pepper
1/2 cup cilantro leaves, chopped
1/4 cup yellow onion, chopped
1/2 teaspoon salt
Blend 1/4 cup coconut meat with lemon juice, place in a bowl and add remaining ingredients in to a bowl a mix well. Keep refrigerated, will last for a couple of days.

Thai-Style Cucumbers (Makes 4 Servings)
Excellent side dish – Full of goodness
3 cucumbers, peeled and thinly sliced
1 teaspoon of sea salt
3 tablespoons of basil chiffonade
1/2 tablespoon minced ginger
Juice 2 limes, about 4 tablespoons
2 to 3 red chillies, seeded and finely chopped
Toss cucumbers with salt let sit for about 10 minutes, strain off excess water and toss cucumbers with the rest of the ingredients and serve immediately.
